This product is made from the belly after it has been smoked and cured for bacon. Usually these are the trimmings and ends that don't slice into "pretty" bacon. I use these for beans, soups and fry them up to add to our omelettes and/or breakfast hash. These packages are variable in size, marble, cut and weight, but don't be afraid of 'em..... variety is the spice of life, right?!
