This is a throwback to the old days... Cottage Bacon was a mainstay in the Jodar Farms farmers market coolers. We recently had a few folks asking for is again, so we thought why not!?
These are cured shoulder (the blade to be exact). It is usually a nicely marbled set of medallions that make for great sandwich meats or breakfast sides. I find that the cured flavor is a bit less than regular bacon and often it's a bit meatier as well.
