A cut from the blade of the shoulder, these are not actually a true "rib". They are essentially pork steaks that have been cut down the center to create some really nice meaty strips of meat that kinda resemble a rib. These are great slow cooked in the oven, smoker, grill or even pan seared. I do usually use them with a BBQ sauce and treat them like a rib, but they pull nicely for stews, soups or for pulled pork sammies too. Each package will either have one small bone but sometimes they are boneless packs.
