Eggs- Pullet Eggs

Our newest Layers are getting after it, however, their eggs start off kind of small. Generally speaking we don't like sending these eggs in our CSA shares or wholesale egg streams as they are harder to bake with due to their size. What these little gems lack in size, they usually make up for it in the flavor and nutrient density. Because these are eggs that are the first they lay I feel like their goodness is concentrated in smaller packages!
