Every year we end up with a handful of extra large turkeys that must have been extra good foragers. These big Toms are just as tender and juicy as their smaller flockmates... however folks are usually a bit hesitant to get a bird that big. SO... in order to move these guys along, we will cut these birds in half which leaves one large breast, one leg and one wing. They cook really nicely this way and we have not had any issues with quality or presentation doing this.
