These are coming from our 2026 Pastured Hogs fed a certified Organic Feed from Yoder Farms in Trinidad, CO.
These Chops will have a little more fat on the inside and the edges. More forgiving to drying out and in my opinion have a little more flavor... but I like fat. No need to brine or over season these as they speak for themselves! However, brining does occasionally occur in our kitchen and wowza they are good that way too.
