The back fat usually comes in strips that are easy to work with. I like to make lard with this and use it to fry food or cook my veggies in. Making lard is SUPER easy especially if you have a crock pot. I cut the fat into cubes, throw them in the crock pot on low for 8 hours, then strain through a mesh collander. The liquid is the lard and I toss the solids. I like to freeze most of the lard if I won't be using it before 4-5 weeks, otherwise I refrigerate it.
Great for mixing into elk, antelope and deer for sausage making too!
