Pork Spare Ribs
One Full Rack of Spare Ribs (~2.75-4 lb Racks)
These are beautiful full racks of ribs that make the smoker crowd drool. There are folks that come to the market looking for these racks for competitions or when they really want to wow the neighbors. I will often cheat and pre-cook a couple of racks in the oven for a couple hours at 225 F and then finish them on the grill or smoker later. Either way..... these are wonderful!
