Coming from the blade of the shoulder these are generally well marbeled bone-in shoulder cuts. My Dad LOVES these things and if you ever find him at market he will probably talk you into buying 4 packs of these. Honestly they work for all sorts of things, so they kinda sell themselves really. I use them as a big grilled "chop", I throw em in the crock pot, I slow cook in the oven, I'll smoke em, I'll use for green chili... you know what maybe this is one of my favorite cuts!
