Stewing Hen

This is not your usual grocery store chicken.... these are retired laying hens from our egg flock that are approximately 3 years old. Because these are not your usual "meat chicken" they need to be cooked differently than our roasting hens.

SLOW AND LOW is the mantra for these old girls. These chickens need time to braise and tenderize, but trust me when I say, "the flavor is worth the wait!" There is a reason we sell hundreds of these each fall, they make some of the best soup, enchiladas, tamales and Coq au Vin!
